I did it!
Somehow, through long periods of trial and error, (and perhaps a few choice, stemming from frustration, adult words) I have finally created a blog. Well, let’s hope I did….. Such an accomplishment should be rewarded by a yum-tastic dinner. Because the current outdoor temperatures are obscene, a simple, “let’s not heat up our house” dinner is on the menu. Quinoa tacos are a wonderfully quick, simple, packed full of protein kind of dinner. A perfect meal for the days Mother Nature tries to cook you! 🙂
Here is my recipe:
Quinoa Tacos
Taco Seasoning~
1 Tablespoon onion powder
1 Tablespoon garlic powder
1 beef bullion
1 teaspoon tapioca flour (substitute with regular flour for those that are not Celiac)
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cayenne powder
pinch of sugar
Mix ingredients thoroughly.
In saucepan add one cup Quinoa, 2 cups of water, and taco seasoning. Follow directions for cooking the Quinoa (usually bring to a boil and simmer for 15-20 minutes). Serve as you would ground taco meat. Enjoy!
